Oolong tea is known as a staple asian restaurant tea to be drunk with the meal to aid digestion. The Chinese categorise this as blue tea, and is semi fermented. However, the fermentation time can vary greatly and so the leaf can look anything from green and rolled, to a very dark brown with a huge leaf.
In the cup it tends to have a slightly pungent taste, but our new batch has come in with some very distinctive chocolate overtones.
